apple banana muffins

INGREDIENTS

2 apples, cleaned, peeled and finely diced
3 large ripe bananas, mashed
1/4 cup brown sugar
1/2 cup pure honey
2 cups all-purpose flour
2 eggs
3 tbsp unsalted butter, melted
¼ cup milk of choice with a few drops of squeezed fresh lemon
1 tsp salt
½ tsp ground cinnamon
½ tsp ground nutmeg
1 tsp vanilla extract
1 tsp baking soda

METHOD

Pre-heat oven to 190°C / 375°F.
Line 12 muffin cups with paper liners.
In a large mixing bowl, mash the bananas with a fork.
Add the brown sugar and honey.
Melt the butter in a saucepan.
Add the melted butter to the banana sugar mixture and mix well.
Add the eggs and mix again.
Add the salt, cinnamon, nutmeg, baking soda and vanilla extract and mix thoroughly.
Add the milk and mix.
Add the flour and whisk.
When mixture is smooth, add the apple pieces and stir.
Fill the muffin cups’ paper liners all the way to the top.
Bake for around 25 minutes.
Let cool and enjoy!
