INGREDIENTS
1/2 cup oil
3 eggs
1 1/2 cups of yogurt (about 300 grams)
1 tsp soda bicarbonate
1/2 tsp salt
1 to 1 1/2 cups wholemeal flour depending on the yogurt consistency
200 grams Greek feta or any other salty, hard white cheese, grinded
optional for even more protein:
a couple of tablespoons of sesame seeds/ walnuts/ sunflower seeds/ chia seeds
METHOD
Preheat oven to (200°C / 392°F.
Mix the eggs with the oil.
Add the soda bicarbonate to the yogurt and mix.
Add the yogurt consistency to the oil and egg mixture and incorporate thoroughly.
Add the salt and the flour and mix well.
Grind the cheese and incorporate into the mixture.
If adding any additional nuts and seeds, mix well again.
Transfer the mixture to an oiled 9×5 inch pan (you can skip the extra oil by adding a sheet of baking paper).
Smooth it out so it reaches an even height, width and shape.
Bake for 20 – 25 minutes.
Let it cool and enjoy.
