3 – 4 tablespoons melted butter
3 – 4 tablespoons brown sugar
1 tablespoon all-purpose flour (or omit completely or replace with coconut, oat or gluten-free flour)
1 medium egg
1 teaspoon vanilla extract
1/4 teaspoon almond extract
Pinch of salt
1/4 teaspoon baking soda
1 cup grinded nuts – my personal preferences are almond, cashew, walnut and macadamia but it’s up to you to choose your favourite nuts or what you have available at home.
Preheat oven 350F/180C.
Mix the sugar with the melted butter.
Add vanilla and almond extracts.
Add the egg and mix until well combined.
Add the flour, salt and soda and mix well.
Add the grinded mix nuts and mix well.
Refrigerate the dough for at least 30 minutes.
Take 1 tablespoon from the dough, roll between your palms, and place on your baking pan.
Press gently with a fork. Leave some space between the cookies.
Bake the cookies for about 11 – 15 minutes.
Let them cool and enjoy.
