Ingredients:
1/2 cup coconut oil, melted
1/2 cup brown sugar or 1 cup if you like your cookies sweeter
1 teaspoon baking soda
1 teaspoon salt
Zest of one orange
Juice of one orange
2 large eggs
1 cup whole-wheat flour
1 cup all-purpose flour
1 cup chocolate chips
DIRECTIONS:
Preheat oven to 350°F (180ºC).
In medium bowl, grate orange peel and mix it with the brown sugar. Leave for a few minutes to let the flavor soak in. Mix in coconut oil until thoroughly blended. Mix in eggs and vanilla, mixing until smooth.
In separate bowl, mix together the flours, salt, and baking soda; blend into the wet mixture. Add the chocolate chips and mix until incorporated.
Drop a tablespoon of dough onto greased baking sheet. Bake at 350°F for 12 to 18 minutes or until cookies are ready.
Remove from oven and allow cookies to cool 5 –10 minutes before removing from baking sheet. Cookies will harden when taken out the oven so even if they look soft when taken out, don’t worry.
Cool completely then store in an airtight container. Mine can last a week in the winter, if properly sealed and about 3 days in the summer before needing to be refrigerated.
