Makes 12- 15 cookies (depending on size)
1/2 cup – peanut butter, softened (or any other nut butter of your choice)
1/2 cup to 1 cup – honey
1 large – egg
1 tsp. – vanilla extract
1 1/2 cups – quick cooking oats or oat flour
1/4 tsp. – salt
1 tsp. – ground cinnamon
1/2 tsp. – baking soda
1 cup – apple, grated or cut in small pieces
*optional: half cup of nut of choice – I usually add some grated walnuts or almonds for extra protein
**optional: a tablespoon of chia seeds
In medium bowl, beat peanut butter with honey until thoroughly blended.
Blend in egg and vanilla, mixing until smooth.
In separate bowl, mix together oats or oat flour, salt, cinnamon and baking soda; blend into honey mixture.
Blend in apples and nuts if using.
Drop dough with the help of two tablespoons onto greased baking sheet.
Bake at 350°F for 12 to 14 minutes until cookies are golden brown.
Remove from oven and allow cookies to cool 2 to 3 minutes before removing from baking sheet.
Cool completely then store in an airtight container. Mine can last a week in the winter, if properly sealed and about 3 days in the summer before needing to be refrigerated.
