INGREDIENTS
2 large sweet potatoes
3 carrots
half large onion or one small one
mixed seeds to sprinkle on top
METHOD
Saute the onion in olive oil until brownish
Peel and cut the carrots
Add to the onion and cook for about 5 minutes
Add 3 cups of veggie stock or water and bring to a boil
Once the water is boiling, add the peeled and cut in cubes sweet potatoes
Let cook for about 30 minutes
When the vegetables are soft, remove from cooker
Place the soup in a blender or food processor and pulse until a smooth consistency is achieved
Sprinkle some seeds on top and enjoy!
*Increase the vegetables and liquid required if serving more portions.
